Ingredients for Royal Blackened Catfish

Method

Cooking Directions for Royal Blackened Catfish

  1. 1

    Prepare the Catfish

Pat the catfish fillets dry with paper towels. Season both sides generously with blackening seasoning.

  2. 2

    Heat the Skillet

In a large iron skillet, heat 2 tablespoons of olive oil over medium-high heat until it starts to shimmer.

  3. 3

    Blacken the Catfish

Carefully place the seasoned catfish fillets in the hot skillet. Cook for about 4-5 minutes on each side or until the fish is blackened and cooked through.

  4. 4

    Prepare the Vegetables

In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add diced bell pepper and sliced zucchini. Season with salt and black pepper, and sauté until tender, about 5-7 minutes.

  5. 5

    Serve

On a plate, serve a scoop of cooked white rice topped with creole sauce. Place the blackened catfish on the side and add the seasoned vegetables. Enjoy!
