Prepare the Catfish
Pat the catfish fillets dry with paper towels. Season both sides generously with blackening seasoning.

Blacken the Catfish
Carefully place the seasoned catfish fillets in the hot skillet. Cook for about 4-5 minutes on each side or until the fish is blackened and cooked through.

Prepare the Vegetables
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add diced bell pepper and sliced zucchini. Season with salt and black pepper, and sauté until tender, about 5-7 minutes.

Serve
On a plate, serve a scoop of cooked white rice topped with creole sauce. Place the blackened catfish on the side and add the seasoned vegetables. Enjoy!
