Make the Beignet Dough
In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, beat the eggs, then mix in milk and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.

Shape and Fry
On a floured surface, roll out the dough to about 1/2-inch thick. Cut into fries or strips. Heat vegetable oil in a deep pan to 350°F (175°C). Fry the dough strips in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare the Bananas
Slice the bananas into thin rounds.

Assemble the Dish
Serve the hot beignet fries topped with sliced bananas and drizzled with the warm Foster sauce.
