Cook the Sausage
In a large pot, heat the vegetable oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Remove and set aside.

Add Chicken
Add the chicken to the pot and cook until browned, about 5-7 minutes.

Combine Ingredients
Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, bay leaves, and cooked sausage. Bring to a boil.

Simmer
Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

Add Shrimp
Stir in the shrimp and cook for an additional 5 minutes, or until the shrimp are pink and fully cooked.

Season to Taste
Season with salt and black pepper to taste. Remove bay leaves before serving.

Garnish and Serve
Garnish with chopped green onions and parsley before serving.
