Make the Batter
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined. In another bowl, mix the milk, eggs, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be thick but pourable.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil's readiness by dropping a small amount of batter into the oil; it should sizzle and float to the surface.

Fry the Beignet Fries
Using a piping bag or a zip-top bag with the corner snipped off, pipe strips of batter into the hot oil, cutting them to your desired length. Fry the beignet fries in batches for about 2-3 minutes on each side or until golden brown and puffed up. Use a slotted spoon to remove them from the oil and drain on paper towels.

Once the beignet fries are drained, sprinkle generously with powdered sugar. Serve warm and enjoy!
