Prepare the popcorn shrimp, gulf oysters, and catfish fillets by rinsing them under cold water and patting them dry with paper towels.

In a mixing bowl, combine the flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk. Dip each seafood item into the egg mixture, then dredge in the flour mixture, ensuring they are fully coated.

Frying the Seafood
Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the breaded seafood in batches, frying until golden brown (about 3-4 minutes for shrimp and oysters, and 5-6 minutes for catfish). Remove and drain on paper towels.

Slice the french bread loaves in half lengthwise. Layer with lettuce, fried seafood of your choice, sliced tomatoes, and tartar sauce. Close the sandwich and serve with fries on the side.
