Preparation and Cooking
Marinate the Chicken
In a large bowl, mix the buttermilk and hot sauce. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Dredging Mixture
In another bowl, whisk together the flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
Fry the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the buttermilk mixture, allowing excess liquid to drip off. Dredge each piece in the flour mixture, pressing to adhere. Fry the chicken in batches for about 6-8 minutes per side, or until golden brown and cooked through. Drain on paper towels.
Assemble the Sandwich
Spread mayonnaise on the bottom half of each sandwich bun. Place a piece of fried chicken on top, add pickles, and drizzle with additional hot sauce. Top with the other half of the bun.
Serve
