Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even sticks, approximately 1/4-inch thick.
Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove moisture.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Carefully add the dry potato sticks to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown.
Drain and Season
Remove the fries from the oil and drain on paper towels. While still hot, season with salt, pepper, and any optional seasonings to taste.
Serve
Serve the hand-cut French fries hot with your favorite dipping sauces.
