Preparation and Cooking
Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into large, thick strips to create handcut fries.
Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.
Dry the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel to remove as much moisture as possible.
Heat the Oil
In a large, deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature.
Fry the Potatoes
Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes until golden brown and crispy.
Drain and Season
Remove the fries from the oil with a slotted spoon and drain on paper towels. Immediately season with salt, black pepper, and paprika to taste.

Serve the handcut fries hot and enjoy!
