Marinate the Chicken
In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Coating
In another bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper together.

Make the Coleslaw
In a bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Mix until well combined and set aside in the refrigerator.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Remove chicken from the marinade, letting excess buttermilk drip off. Dredge each piece in the flour mixture, shaking off excess. Fry the chicken in batches for about 6-8 minutes on each side, or until golden brown and cooked through. Use a thermometer to ensure the internal temperature reaches 165°F (74°C).

Remove the fried chicken and let it drain on a paper towel. Serve topped with sweet pickle chips and coleslaw on the side.
