    Prepare the Rack of Lamb

    Preheat your oven to 400°F (200°C). Season the rack of lamb generously with salt and black pepper.

    Make the Herb Mixture

    In a bowl, combine the rosemary, thyme, parsley, minced garlic, olive oil, and bread crumbs. Mix well to form a paste.

    Crust the Lamb

    Spread the herb mixture evenly over the meat side of the rack of lamb, pressing it down to adhere.

    Roast the Lamb

    Place the rack of lamb in a roasting pan, bone side down. Roast in the preheated oven for about 20-25 minutes for medium-rare, or until a meat thermometer reads 130°F (54°C).

    Rest and Serve

    Remove the rack of lamb from the oven and let it rest for 10 minutes before slicing between the bones. Serve with your choice of sides.
