Prepare the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the eggs and scramble until fully cooked. Season with salt and black pepper. Remove from heat and let cool slightly. In a mixing bowl, combine the scrambled eggs with goat cheese, chopped herbs, and honey. Mix until well combined.

Assemble the Cigars
Lay a wonton wrapper on a clean surface. Place about 1 tablespoon of the filling in the center of the wrapper. Fold the bottom edge over the filling, then fold in the sides and roll tightly to form a cigar shape. Repeat with the remaining wrappers and filling.

Cook the Cigars
In a large skillet, heat the remaining olive oil over medium-high heat. Once hot, add the cigars in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy on all sides, about 3-4 minutes. Remove from the skillet and place on paper towels to drain excess oil.

Serve
Drizzle additional honey over the cooked cigars before serving, if desired. Serve warm as an appetizer or snack.
