    Prepare the Herb Crust

    In a bowl, combine chopped rosemary, thyme, parsley, minced garlic, Dijon mustard, bread crumbs, olive oil, salt, and pepper. Mix well until it forms a paste.

    Prepare the Rack of Lamb

    Preheat your oven to 400°F (200°C). Season the rack of lamb with salt and pepper. Heat a skillet over medium-high heat and sear the lamb on all sides until golden brown, about 3-4 minutes per side.

    Coat the Lamb

    Remove the lamb from the skillet and let it cool slightly. Spread the herb crust mixture evenly over the meaty part of the lamb.

    Roast the Lamb

    Place the lamb on a baking sheet and roast in the preheated oven for 20-25 minutes for medium-rare, or until a meat thermometer reads 135°F (57°C).

    Rest and Serve

    Remove the lamb from the oven and let it rest for 10 minutes before slicing. Serve with a side of carrots in carrot butter.
