    Prepare the Lamb Tagine

    In a large pot or tagine, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

    Brown the Lamb

    Add the lamb chunks to the pot, season with salt and pepper, and brown on all sides.

    Add Spices and Harissa

    Stir in the cumin, coriander, cinnamon, and harissa paste, cooking for another minute until fragrant.

    Add Liquids and Fruits

    Pour in the broth, add the chopped dried apricots and the cinnamon stick. Bring to a simmer.

    Simmer the Tagine

    Cover and let the tagine simmer on low heat for about 1.5 to 2 hours, or until the lamb is tender.

    Prepare the Couscous

    In a separate pot, bring 1 cup of water to a boil. Add the couscous and a pinch of salt, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.

    Toast the Almonds

    In a small pan, toast the slivered almonds over medium heat until golden brown, then mix into the couscous.

    Serve the lamb tagine over the spiced almond couscous, garnished with fresh cilantro.
