Preparation
Make the Dough
In a large bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy. In a separate bowl, mix flour and salt. Gradually add the yeast mixture to the flour, mixing until a dough forms.
Knead and Chill
Knead the dough on a floured surface for about 10 minutes until smooth. Form it into a ball, place it in a greased bowl, cover with plastic wrap, and refrigerate for at least 2 hours.
Prepare the Butter Block
While the dough is chilling, prepare the butter block. Take the unsalted butter and shape it into a rectangle between two sheets of parchment paper. Use a rolling pin to flatten it to about 1/2 inch thick. Refrigerate until firm.
Laminate the Dough
Roll out the chilled dough into a large rectangle. Place the butter block in the center and fold the dough over the butter, sealing the edges. Roll the dough out again and perform a series of folds: fold it into thirds like a letter. Wrap and chill for 30 minutes. Repeat this process two more times.
Add the Filling
After the final fold, roll out the dough into a rectangle again. Spread the chocolate hazelnut spread over the surface and sprinkle with brown sugar and chopped hazelnuts. Roll the dough tightly into a log.
Shape the Kouign Amann
Cut the log into equal pieces (about 1-2 inches thick). Place the pieces in a greased muffin tin, cut side up. Allow them to rise for about 30 minutes.
Bake
Preheat the oven to 375°F (190°C). Bake the kouign amann for 25-30 minutes or until golden brown. Allow them to cool slightly before serving.
