Prepare the Chicken
Season the chicken thighs with salt and black pepper. In a large pot or Dutch oven, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken thighs, skin-side down, and cook until browned, about 5-7 minutes on each side. Remove the chicken and set aside.
Deglaze and Simmer
Pour in the Riesling wine and chicken broth, scraping the bottom of the pot to release any browned bits. Add the thyme and return the chicken thighs to the pot. Bring to a simmer.
Cook the Chicken
Cover and let the chicken cook in the liquid for about 30-35 minutes, or until the chicken is cooked through and tender.
Serve
Once cooked, remove from heat. Serve the Coq au Riesling hot, garnished with chopped parsley.
