    Prepare the lamb

    In a bowl, combine minced garlic, cumin, coriander, oregano, salt, black pepper, and olive oil to create a marinade. Rub this mixture over the lamb shoulder and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

    Cook the lamb

    Preheat the oven to 350°F (175°C). Place the marinated lamb in a roasting pan and cook for about 2-2.5 hours, or until the meat is tender and reaches an internal temperature of 145°F (63°C). Let it rest before slicing.

    Prepare the rice

    While the lamb is cooking, rinse the rice under cold water. In a medium pot, combine rice and water or broth (4 cups). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until grains are tender and water is absorbed. Fluff with a fork.

    Prepare the toppings

    Chop the lettuce, dice the tomatoes, slice the cucumber, onion, jalapeno, and pickles. Rinse and drain the black olives, chickpeas, and corn.

    Assemble the dish

    In a bowl, layer rice, sliced lamb, and all toppings. Drizzle with your choice of white, hot, or green sauce.
