Prepare the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are softened, about 5 minutes. Stir in the shredded chicken, salt, black pepper, cumin, and chili powder. Cook for an additional 3-4 minutes until the chicken is heated through. Remove from heat and set aside.

Assemble the Quesadilla
Place a tortilla in the skillet over medium heat. Sprinkle half of the shredded cheddar and Monterey Jack cheese over half of the tortilla. Add a portion of the chicken and vegetable mixture on top of the cheese, then sprinkle with the remaining cheese. Fold the tortilla in half to cover the filling.

Cook the Quesadilla
Cook for about 3-4 minutes on one side until the cheese is melted and the tortilla is golden brown. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.

Remove the quesadilla from the skillet and let it cool for a minute before cutting into wedges. Serve with your choice of salsa, guacamole, or sour cream.
