    Prepare the Rice

    Rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice, water (2 cups for white rice, 2.5 cups for brown rice), and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes (white rice) or 30-35 minutes (brown rice) until cooked.

    Cook the Fish

    While the rice is cooking, heat olive oil in a skillet over medium heat. Season fish fillets with salt and pepper. Cook the fillets for about 4-5 minutes per side or until the fish is cooked through and flakes easily with a fork.

    Prepare the Salad

    Chop the lettuce, tomato, cucumber, onion, jalapeno, and pickles. Combine them in a bowl along with black olives, chickpeas, and corn. Toss gently.

    Assemble the Dish

    Once the rice is done, fluff it with a fork and place a serving of rice on each plate. Top with the cooked fish and a generous helping of the salad. Drizzle choice of sauces over the top.

    Serve immediately with extra sauces on the side, if desired.
