Tamale and Enchiladas Ingredients
Method
Instructions
- 1
Prep the Corn Husks
Soak the corn husks in warm water for 30 minutes to soften them, then drain and set aside.
- 2
Prepare the Tamale Dough
In a large mixing bowl, combine the corn masa harina, chicken broth, water, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix until a smooth dough forms.
- 3
Assemble the Tamales
Take a corn husk, spread about 1/4 cup of the masa dough on the husk, leaving space at the bottom. Add a tablespoon of shredded chicken and a sprinkle of cheese, then fold the sides over and roll up the husk. Repeat with remaining husks and filling.
- 4
Steam the Tamales
Place the tamales upright in a steamer basket over boiling water. Cover and steam for about 1 hour, or until the masa is firm to the touch.
- 5
Prepare the Enchiladas
Preheat the oven to 350°F (175°C). Spread a layer of red enchilada sauce on the bottom of a baking dish. Fill tortillas with shredded chicken and cheese, roll them up, and place seam-side down in the dish.
- 6
Bake the Enchiladas
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with extra cheese. Bake for 20-25 minutes, until cheese is bubbly and golden.
- 7
Serve
Serve the tamales with additional enchilada sauce on the side, and enjoy your chicken tamales and enchiladas!
