Prepare the Filling
In a skillet over medium heat, cook the ground beef and chorizo until browned and cooked through. Drain excess fat.

Warm the Sauce
Add the red enchilada sauce to the meat mixture, stir well, and let simmer for 5 minutes.

Assemble the Burritos
On each mini tortilla, place a portion of the meat mixture, a sprinkle of both cheeses, and roll tightly.

Bake
Place the rolled burritos on a baking dish, pour any remaining red sauce over the top, and sprinkle with more cheese. Bake in a preheated oven at 350°F (175°C) for 15 minutes or until cheese is melted.
