    Prepare the Filling

    In a skillet over medium heat, cook the ground beef and chorizo until browned and cooked through. Drain excess fat.

    Warm the Sauce

    Add the red enchilada sauce to the meat mixture, stir well, and let simmer for 5 minutes.

    Prepare the Grilled Vegetables

    In another skillet, heat olive oil over medium heat. Add the bell peppers, zucchini, and red onion. Season with salt and black pepper, and grill until tender, about 5-7 minutes.

    On each mini tortilla, place a portion of the meat mixture, a sprinkle of both cheeses, and roll tightly.
