Cook the Meat

In a skillet over medium heat, heat olive oil. Add diced onion and minced garlic, sauté until translucent. Add ground beef or chicken, cook until browned. Season with salt and black pepper.

Mix the Filling

In a large bowl, combine the cooked meat, black beans, cooked rice, and chopped cilantro. Mix well to combine.

Assemble the Burritos

Lay a tortilla flat, spoon filling in the center, and top with a little red sauce. Fold in the sides and roll tightly.

Prepare for Baking

Preheat your oven to 350°F (175°C). Place the burritos seam-side down in a baking dish. Pour the remaining red sauce over the top of the burritos and sprinkle with Cheddar and Monterey Jack cheese.

Bake

Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Serve

Remove from the oven, let cool for a few minutes, and serve warm with additional cilantro if desired.
