Prepare the Ingredients
Gather all ingredients and prepare the Spanish rice according to package instructions. If using raw meat, cook it thoroughly and season to taste.
Assemble the Burrito
Lay a flour tortilla flat on a clean surface. In the center of the tortilla, layer 1/2 cup of Spanish rice, 1/4 cup of black beans, 1/2 cup of shredded lettuce, 1/4 cup of pico de gallo, and 1/4 cup of your choice of meat.
Fold the Burrito
Fold the sides of the tortilla inward, then roll it up from the bottom to the top, ensuring all fillings are securely wrapped inside.
Grill the Burrito
Preheat a grill or grill pan over medium heat. Place the burrito seam-side down on the grill and cook for about 3-4 minutes per side, or until golden brown and crispy.
Prepare the Dressing
In a small bowl, mix together 1/2 cup of ranch dressing with 2 tablespoons of chipotle sauce for a creamy chipotle ranch dressing.
Serve
Cut the grilled burrito in half and serve with the creamy chipotle ranch dressing on the side.
