Prepare the Ingredients
Slice the steak or chicken into strips, and slice the poblano peppers and onion into thin slices.

Cook the Vegetables
In a large skillet, heat olive oil over medium-high heat. Add the sliced onion and poblano peppers. Sauté for about 5-7 minutes until softened and slightly charred. Remove from the skillet and set aside.

Cook the Meat
In the same skillet, add the steak or chicken strips. Season with chili powder, cumin, salt, and black pepper. Cook for 5-7 minutes until cooked through and browned. Return the cooked vegetables to the skillet and mix well.

Assemble the Burritos
Lay a flour tortilla flat on a clean surface. Spoon a portion of the meat and vegetable mixture onto the tortilla, top with cheddar and Monterey Jack cheese, and drizzle with red sauce. Fold in the sides and roll the tortilla tightly to enclose the filling.

Cook the Burritos
In a clean skillet, place the burritos seam-side down. Cook over medium heat for about 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted.
