Prepare the Jalapeños

If using jalapeño peppers, slice them finely and set aside. If you prefer the bean and cheese burrito without jalapeños, skip this step.

Heat the Refried Beans

In a saucepan, heat the refried beans over medium heat. Stir in salt and black pepper to taste. Cook until warmed through.

Assemble the Burritos

Lay out a flour tortilla on a flat surface. Spread about half a cup of refried beans in the center. If using, sprinkle jalapeño slices on top. Add a generous amount of both mild Cheddar and Monterey Jack cheese.

Wrap the Burrito

Fold the sides of the tortilla inward, then roll it up tightly from the bottom to the top to enclose the filling completely.

Cook the Burritos

In a skillet, heat olive oil over medium heat. Place the burritos seam-side down in the skillet and cook until golden brown on one side, about 3-4 minutes. Flip and cook the other side for an additional 3-4 minutes.

Serve

Remove the burritos from the skillet and place them on a serving plate. Top with homemade red sauce and additional cheese if desired. Serve hot.
