Assemble the Poco Loco
In a baking dish, layer two corn tortillas, half of the cooked ground beef, half of the Cheddar cheese, and half of the Monterey Jack cheese. Repeat the layers with the remaining ingredients and top with red sauce.

Preheat the oven to 350°F (175°C). Bake the assembled Poco Loco for 20 minutes until the cheese is bubbly and golden.

While the Poco Loco is baking, prepare the beef taco by filling taco shells with the remaining ground beef, shredded lettuce, diced tomatoes, and a dollop of sour cream.
