Prepare the Filling
In a large bowl, combine the shredded chicken, roasted red peppers, grilled corn, mild Cheddar cheese, and Monterey Jack cheese. Season with salt and black pepper to taste. Mix well until all ingredients are evenly combined.

Roll the Flautas
Take one flour tortilla and place a generous amount of the chicken filling along one edge. Roll the tortilla tightly around the filling and secure with a toothpick if necessary. Repeat with the remaining tortillas and filling.

Fry the Flautas
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the rolled flautas in batches, frying until they are golden brown and crispy on all sides, about 3-4 minutes. Remove and place on a paper towel-lined plate to drain excess oil.

Serve the crispy flautas warm with jalapeño jelly for dipping.
