Prepare the Chile Rellenos
Preheat the oven to 375°F (190°C). Roast the poblano peppers over an open flame until the skin is charred. Place the peppers in a bowl and cover with plastic wrap to steam for 10 minutes. Peel the skin off, make a slit on one side, and remove the seeds.

Stuff each pepper with the meat and cheese mixture. Place the stuffed peppers in a baking dish and pour red enchilada sauce over them. Bake for 20 minutes.

Prepare the Mini Burritos
Warm the tortillas in a skillet. Place a portion of the meat mixture on each tortilla and roll them into mini burritos.

Serve the mini burritos alongside the baked chile rellenos. Top the peppers with additional enchilada sauce and a dollop of sour cream.

Serve with a side of Spanish rice and your choice of beans.
