Burrito and Relleno Ingredients

Method

Preparation Steps

  1. 1

    Prepare the Spanish Rice

In a saucepan, heat olive oil over medium heat. Add minced garlic and diced onion, sautéing until translucent. Stir in the rice and toast for 2-3 minutes. Add water or broth (follow package instructions), cumin, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer until rice is cooked.

  2. 2

    Cook the Ground Beef

In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add zesty red sauce, mixing well. Simmer for 5-10 minutes until heated through.

  3. 3

    Prepare the Chile Relleno

Roast poblano peppers over an open flame until charred. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off charred skin, cut a slit, and remove seeds. Stuff with shredded cheese. Heat a skillet with a bit of oil, and cook the stuffed peppers until cheese is melted and lightly golden.

  4. 4

    Assemble the Burrito

Lay a flour tortilla flat on a plate. Spoon the ground beef mixture into the center, fold in the sides, and roll it up tightly. Repeat with remaining tortillas.

  5. 5

    Serve

Place the burrito on a serving plate alongside the chile relleno and a serving of Spanish rice. Drizzle with extra zesty red sauce if desired.
