Method

Prepare the Seafood

  1. 1

    Cook Mahi Mahi

Preheat the grill or a skillet over medium-high heat. Brush the Mahi Mahi fillet with 1 tablespoon of olive oil and season with salt and pepper. Grill or cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from heat and let it cool before flaking into bite-sized pieces.

  2. 2

    Cook Shrimp

In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and let cool.

Assemble the Salad

  1. 3

    Prepare Salad Base

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix the ingredients.

  2. 4

    Add Seafood

Add the flaked Mahi Mahi and cooked shrimp to the salad base. Toss gently to combine.

Make Caesar Dressing (optional)

  1. 5

    Combine Ingredients

In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, minced garlic, Worcestershire sauce, salt, and black pepper until smooth.

  2. 6

    Dress the Salad

Drizzle the Caesar dressing over the seafood salad and toss gently to coat all the ingredients.

Garnish and Serve

  1. 7

    Garnish the Salad

Sprinkle the chopped fresh parsley over the salad, and serve with lemon wedges on the side.

  2. 8

    Serve

Divide the seafood salad into serving bowls and enjoy your refreshing dish!
