    If using Mahi or Ono fillets, season them lightly with salt and pepper. Heat a grill or skillet over medium-high heat and cook the fillets for 4-5 minutes on each side or until cooked through and flaky. If using shrimp, sauté them in a skillet with a little olive oil over medium heat for about 5-7 minutes or until they turn pink and opaque.

    Prepare the Vegetables

    In a large mixing bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and diced avocado. Toss gently to mix the vegetables evenly.

    Make the Dressing

    In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper until well combined and emulsified.

    Combine and Serve

    Once the seafood is cooked, let it rest for a couple of minutes before slicing (if using fillets). Add the seafood to the bowl with the vegetables, drizzle the dressing over the top, and toss gently to combine. Serve immediately and enjoy your refreshing seafood salad!
