Preparing the Rice

Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of long-grain rice, reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and water is absorbed.
Cooking the Seafood

Prepare the Seafood
While the rice is cooking, rinse the shrimp and scallops under cold water and pat them dry with paper towels. Season with salt and black pepper.

Sear the Shrimp and Scallops
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and scallops to the skillet, and cook for 3-4 minutes, stirring occasionally, until the shrimp turn pink and the scallops are opaque.

Cook the Fish
In the same skillet, add another tablespoon of olive oil if needed, and place the fish fillets in the skillet. Cook for 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Squeeze lemon juice over the fish while cooking.
Serving the Platter

Garnish
Sprinkle chopped fresh parsley over the seafood and rice for garnish. Serve immediately with additional lemon wedges on the side if desired.
