Prepare the Coleslaw

    Mix the Coleslaw Ingredients

    In a large bowl, combine the shredded green cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all ingredients are coated in dressing.

    Chill the Coleslaw

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Tartar Sauce

    Combine Tartar Sauce Ingredients

    In a medium bowl, mix together the mayonnaise, finely chopped pickles, capers, lemon juice, and Dijon mustard. Season with salt and black pepper to taste.

    Refrigerate Tartar Sauce

    Cover and refrigerate for at least 15 minutes to let the flavors develop.

Cook the Fish

    Preheat the Grill or Pan

    Heat a grill or a skillet over medium-high heat.

    Cook the Fish

    Season the Ono or Mahi fish fillets with salt and pepper. Place the fillets on the grill or skillet and cook for about 4-5 minutes on each side, or until cooked through and flaky.

Assemble the Burgers

    Lightly toast the burger buns on the grill or in a toaster.

    Build the Burger

    On the bottom half of each bun, place a piece of cooked fish, followed by a slice of cheddar cheese, then jack cheese, a slice of tomato, and a generous spoonful of coleslaw. Top with the other half of the bun.
