Preparing the Tartar Sauce

    Make the Tartar Sauce

    In a medium bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and Dijon mustard. Mix well until all ingredients are evenly combined. Set aside to allow the flavors to meld.

Cooking the Mahi Mahi

    Prepare the Mahi Mahi

    Pat the Mahi Mahi fillets dry with paper towels. Brush both sides of the fillets with olive oil and season with salt and black pepper.

    Grill the Mahi Mahi

    Preheat the grill to medium-high heat. Place the seasoned Mahi Mahi fillets on the grill. Cook for about 4-5 minutes per side, or until the fish flakes easily with a fork and has nice grill marks. Remove from the grill and let rest for a minute.

Assembling the Burger

    Toast the Buns

    While the Mahi Mahi is resting, toast the burger buns on the grill for about 1-2 minutes until they are golden brown.

    Build the Burger

    On the bottom half of each toasted bun, place a lettuce leaf, followed by a grilled Mahi Mahi fillet. Top with slices of tomato, and generously spread the tartar sauce over the fish. Place the top half of the bun to complete the burger.
