Combine Ingredients
In a medium saucepan, whisk together the coconut milk, sugar, cornstarch, water, and salt until well combined.

Heat Mixture
Place the saucepan over medium heat and continuously stir the mixture until it thickens and begins to bubble, about 10-15 minutes.

Pour into Dish
Once thickened, pour the mixture into a square or rectangular dish. Smooth the top with a spatula.

Cool the Pudding
Allow the pudding to cool at room temperature for about 30 minutes, then cover with plastic wrap and refrigerate for at least 2 hours or until set.

Cut and Serve
Once the haupia is set, cut it into squares or rectangles. Serve chilled.

Top each piece with shredded coconut and/or fresh fruit for added flavor and presentation.
