Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the salmon is well coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and covered with white ash.

Grilling the Salmon

  1. 3

    Grill the Salmon

Remove the salmon from the marinade and discard the leftover marinade. Place the salmon skin-side down on the grill. Cook for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparation of Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and cut the asparagus, zucchini, and bell pepper into bite-sized pieces.

  2. 5

    Season the Vegetables

In a bowl, toss the vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling the Vegetables

  1. 6

    Grill the Vegetables

Once the salmon is done, place the seasoned vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 7

    Plate the Dish

Once both the salmon and vegetables are grilled, remove them from the grill and let them rest for a minute. Serve the grilled salmon alongside the seasonal vegetables on a plate.
