Preparing the Grilled Mahi Mahi

Marinate the Fish
In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika. Place the mahi mahi fillets in a shallow dish and pour the marinade over the fish. Cover and refrigerate for at least 30 minutes.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).

Grill the Fish
Remove the mahi mahi from the marinade and place it on the hot grill. Grill for about 5-7 minutes on each side, or until the fish is opaque and flakes easily with a fork. Once done, remove from the grill and sprinkle with fresh parsley.

Cut the zucchini, bell peppers, and carrots into bite-sized pieces.

Rinse the Rice
Rinse the white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.
