Fish Preparation

Prepare the Breading
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, paprika, and cayenne pepper.

Make the Batter
Gradually add cold water to the dry ingredients while whisking until you achieve a smooth batter.

Heat the Oil
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Mix Ingredients
In a medium bowl, combine diced tomatoes, red onion, cilantro, lime juice, salt, and jalapeño (if using). Stir well to combine.
Assemble Tacos

Prepare the Tortillas
Warm the soft corn tortillas in a dry skillet over medium heat until pliable.

Assemble the Tacos
On each tortilla, place a few pieces of crispy fish, followed by a handful of shredded cabbage and a spoonful of fresh salsa. Serve with lime wedges on the side.
