Prepare the Filling
If using fish, cut fillets into smaller pieces. If using chicken, cube the breast into bite-sized pieces.

Cook the Protein
Heat a non-stick skillet over medium heat. Add the marinated fish or chicken to the skillet and cook for about 6-8 minutes or until fully cooked through, flipping halfway.

Melt the Cheese
Once the protein is cooked, sprinkle the shredded cheese over the top. Cover the skillet with a lid and let it melt for about 2-3 minutes.
Assembling the Tacos

Warm the Tortillas
In a separate pan, lightly warm the corn tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos
Place a portion of the cooked protein and melted cheese onto each warm tortilla. Top with shredded lettuce, diced tomatoes, and a generous spoonful of salsa.

Fold the tortillas over the filling and serve immediately while warm.
