Mousse Preparation

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Whisk the Eggs and Sugar

    In a separate bowl, separate the egg yolks from the egg whites. Whisk the egg yolks with granulated sugar until pale and thick. Add the melted chocolate mixture and vanilla extract, mixing until well combined.

    Beat the Egg Whites

    In a clean bowl, beat the egg whites with a pinch of salt until they form stiff peaks. Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.

    Chill the Mousse

    Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours, or until set.

    Whip the Cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.

    Top the Mousse

    Once the mousse is set, remove from the refrigerator and top each serving with a dollop of whipped cream.
