Cooking Pasta

    Boil the Pasta

    Bring a large pot of salted water to a boil. Add the linguine noodles and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.

Preparing the Chicken and Sauce

    Sauté the Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breast with salt and pepper. Once the oil is hot, add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let it rest before slicing.

    Cook the Aromatics

    In the same skillet, add another tablespoon of olive oil if necessary. Add minced garlic and diced onion, cooking until the onion is translucent, about 3-4 minutes.

    Add Mushrooms and Tomatoes

    Slice the mushrooms and chop the tomato. Add them to the skillet and cook for an additional 5 minutes until the mushrooms are softened.

    Deglaze with Wine

    Pour in the white wine and let it simmer for about 2-3 minutes, scraping any bits off the bottom of the skillet.

    Finish the Sauce

    Stir in the heavy cream, capers, and parmesan cheese. Let it simmer for another 5 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

    Combine Everything

    Slice the cooked chicken breast and return it to the skillet. Add the cooked linguine and chopped fresh basil. Toss everything together until well combined and heated through.
