Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Dredge the Calamari
Coat the calamari rings in the flour mixture, ensuring they are well covered. Shake off any excess flour.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Carefully add the dredged calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Spicy Aioli Preparation

Mix the Aioli Ingredients
In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, sriracha sauce, and salt. Mix until smooth.

Taste the aioli and adjust salt as needed to suit your preference.
