Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the Potatoes

Wash and peel the Russet potatoes. Using a mandoline or sharp knife, slice the potatoes into thin rounds, about 1/8 inch thick.

  3. 3

    Mince the Garlic

Peel and finely mince the garlic cloves. Set aside.

Assembling the Gratin

  1. 4

    Grease the Baking Dish

Lightly grease a 9x13 inch baking dish with cooking spray or butter to prevent sticking.

  2. 5

    Layer the Potatoes

Arrange half of the sliced potatoes in an even layer across the bottom of the prepared baking dish.

  3. 6

    Add Cream and Seasonings

In a mixing bowl, combine the heavy cream, minced garlic, truffle oil, salt, and black pepper. Pour half of this mixture over the first layer of potatoes.

  4. 7

    Add Cheese

Sprinkle half of the Gruyère and Parmesan cheese over the cream mixture.

  5. 8

    Repeat Layers

Add the remaining potatoes in another even layer, followed by the rest of the cream mixture. Top with the remaining cheese.

  6. 9

    Add Herbs (Optional)

If using, sprinkle fresh thyme over the top layer of cheese for added flavor.

Baking

  1. 10

    Cover and Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

  2. 11

    Uncover and Brown

After 45 minutes, remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

Serving

  1. 12

    Garnish and Serve

Once baked, remove the gratin from the oven and let it cool for 10 minutes. Garnish with chopped chives before serving.
