1. Prep the Chicken
Pat the chicken breasts dry with a paper towel and season both sides with salt, black pepper, dried oregano, paprika, and cumin.
2. Chop Vegetables
Dice the bell pepper and zucchini into bite-sized pieces. Halve the cherry tomatoes.
3. Mince Garlic
Peel and mince the garlic cloves.
Cooking
4. Heat the Olive Oil
In a large skillet, heat the olive oil over medium heat.
5. Cook the Chicken
Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.
6. Sauté the Vegetables
In the same skillet, add the minced garlic and sauté for about 30 seconds. Then add the diced bell pepper and zucchini. Cook for 4-5 minutes until they are tender.
7. Add Cherry Tomatoes
Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften.
8. Combine Chicken and Vegetables
Return the cooked chicken breasts to the skillet and toss everything together to combine. Cook for another minute to heat through.
Serving
9. Garnish and Serve
Remove from heat, garnish with fresh parsley, and serve with lemon wedges on the side.
