    Prepare the Roast

    Remove the prime rib roast from the refrigerator and let it sit at room temperature for about 2 hours before cooking. This helps in even cooking.

    Season the Roast

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, dried rosemary, and dried thyme. Rub this seasoning mixture all over the prime rib roast, ensuring it's evenly coated. If desired, drizzle olive oil over the roast to help the seasoning adhere.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Roast the Prime Rib

    Place the seasoned prime rib roast on a rack in a roasting pan, bone side down. Insert a meat thermometer into the thickest part of the meat, avoiding bone. Roast in the preheated oven for 15 minutes.

    Lower the Temperature

    After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue to roast until the internal temperature reaches your desired doneness (125°F/52°C for rare, 135°F/57°C for medium-rare, 145°F/63°C for medium). For a 3-pound roast, this may take about 1.5 to 2 hours.

    Rest the Meat

    Once the roast reaches the desired temperature, remove it from the oven and cover it loosely with aluminum foil. Let it rest for at least 20-30 minutes before carving. This allows the juices to redistribute.

    After resting, carve the prime rib into slices and serve with your choice of sides, garnished with fresh rosemary and thyme sprigs, if desired.
