    Cut the pork shoulder and pork fat into small cubes, approximately 1-inch in size to ensure easy grinding.

    Peel and finely mince the garlic cloves using a knife or garlic press.

    In a large bowl, combine the cubed pork shoulder, pork fat, minced garlic, smoked paprika, sweet paprika, red wine, salt, black pepper, and cayenne pepper. Mix well until all ingredients are evenly incorporated.

    Using a meat grinder, grind the mixture twice to achieve a fine texture. If you don’t have a grinder, you can use a food processor, but be careful not to over-process the mixture.
