Roasting Potatoes

    Prep the Potatoes

    Preheat your oven to 425°F (220°C). Wash and cube the potatoes into bite-sized pieces.

    Season and Roast

    In a large bowl, toss the cubed potatoes with olive oil, salt, pepper, and paprika until evenly coated. Spread them out on a baking sheet in a single layer.

    Bake

    Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

Cooking Kale and Eggs

    Sauté the Kale

    In a frying pan over medium heat, add a splash of olive oil. Add the kale and sauté for about 3-5 minutes until wilted and tender. Season with salt and pepper to taste.

    Cook the Eggs

    In the same pan, push the kale to the side and crack the local eggs into the pan. Cook for about 2-3 minutes until the whites are set but the yolks are still runny (over easy).

Plating

    Prepare the Avocado

    While the eggs are cooking, slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into wedges.

    Serve

    On a plate, arrange the sautéed kale, place the eggs on top, and add the avocado slices. Serve with the roasted potatoes on the side.
