Main Ingredients

Method

Cooking the Eggs

  1. 1

    Prepare the Pan

In a non-stick skillet, melt 1 tablespoon of butter over medium-low heat until it is bubbly but not browned.

  2. 2

    Cook the Eggs

Crack 2 eggs into the skillet, taking care not to break the yolks. Sprinkle with salt and black pepper. Cook for about 2-3 minutes, or until the whites are set but the yolks remain runny. For over-easy, gently flip each egg and cook for another 30 seconds.

  3. 3

    Remove from Heat

Carefully transfer the cooked eggs to a plate, ensuring the yolks remain intact.

Preparing the Toast

  1. 4

    Toast the Bread

While the eggs are cooking, toast 2 slices of your choice of bread until golden brown.

  2. 5

    Spread Butter

Spread 1 tablespoon of butter on the toasted bread while it is still warm.

Serving the Fruit

  1. 6

    Prepare the Fruit

Rinse and chop the mixed fresh fruit into bite-sized pieces if necessary. Place 1 cup of mixed fruit in a serving bowl.
