    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Rinse under cold water and set aside.

    Chop Vegetables

    Dice the onion and bell pepper into small pieces. Slice the green onions and set aside.

    Shred Kalua Pig

    If not already shredded, take your cooked Kalua pig and shred it into small bite-sized pieces.

Cooking

    Cook Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and cook, stirring occasionally, for about 15 minutes or until they are golden brown and tender.

    Once the potatoes are cooked, add the diced onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are soft.

    Stir in the shredded Kalua pig, minced garlic, soy sauce, black pepper, and salt. Cook for another 5-7 minutes until everything is heated through and well combined.
