Marinating the Chicken

Prepare the Marinade
In a bowl, whisk together soy sauce, pineapple juice, brown sugar, minced garlic, grated ginger, and black pepper until the sugar is dissolved.

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.

Rinse the Rice
Rinse the rice under cold water until the water runs clear.

In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.
