Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well coated. Let them marinate for at least 30 minutes in the refrigerator.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat, around 375°F (190°C). This will ensure a nice sear on the salmon.

  3. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets skin-side down. Grill for about 6-8 minutes on each side, or until the salmon is opaque and flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and trim the asparagus, slice the bell peppers into strips, and cut the zucchini into rounds.

  2. 5

    Season the Vegetables

In a large bowl, toss the prepared vegetables with 1 tablespoon of olive oil, salt, and black pepper until evenly coated.

  3. 6

    Grill the Vegetables

Once the salmon has been grilled for about 6 minutes, place the seasoned vegetables on the grill. Cook for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 7

    Plate the Dish

Once both the salmon and vegetables are grilled, carefully remove them from the grill. Place one salmon fillet on each plate and arrange the grilled vegetables alongside. Serve immediately.
